sunday's letters





dear God:  i know that your in control but it's so hard to keep my chin up when i feel it drifting down with discourage. i know you have a plan for me and that i need to just be patient.

dear husby:  i am so proud to call you my husband. you have been so supportive and loving the past couple of weeks and i know you will always be my soft place to fall when times are hard. you take care of me, good care of me, and i love you most.

dear mama: i'm growing up and still you help me out so much. i'm thankful for the goodies you always send me home with when i come to "visit". you look great and you know you do. i'm proud of you.

dear mil: i could not ask for a better one. i'm so thankful for all you have done to help me out and treating me like i'm one of your own.

dear monkey: i wish i could have made you all better but i'm glad to know your not suffering anymore. we loved you and gave you a chance of having a good "home".

dear birdy: i had no intention of ending your little life in such a horrible way. i'm realizing now i'm just no good with animals.

it's the little things that make us beautiful




some couples may not think much of celebrating their first month of marriage
but we did!
i surprised him with my clever artwork to which he saw when he came through the door
and a hand-written letter taped to a fresh brew of iced tea which he saw after i asked him
to open the fridge to lay out the wings so that they could thaw out
i told you i was a clever one
he surprised me with a single red rose with an attached card
he expressed one rose of many to come
sweet he is
and of course we couldn't celebrate such a special occasion without
our famous hotwings
so we fried some bad boys up and they were the best breaded wings
we had ever made yet














"best yet" homemade mexi cornbread


after experimenting with different cornbread recipes
or should i say disasters?
i finally whipped together my very own that i'm sold on
until i find an even better recipe
which seems impossible
it's very simple and very moist
which is just the way i like it



"best yet" homemade mexican cornbread

ingredients:
1 can rotel, drained
1 pkg. 8 1/2 oz. jiffy corn muffin mix or 8 oz. white cornbread mix
1/2 cup mayo
1 egg slightly beaten
a little bit of shortening for greasing iron skillet

directions:
combine all ingredients together ( minus the shortening for greasing ) mixing well. 
on stove top, grease med. size skillet with shortening on med high heat
 and pour out any excess grease.
return skillet to stovetop and pour cornbread mixture into skillet.
leave on stovetop until cornbread just begins to bubble.
remove skillet from stovetop and transfer to oven on 400 degrees.
bake for twenty-five minutes or until done.

*if you like instead of rotel you can use a can of mexi-corn, drained
** add whatever you like to your cornbread mixture like cheese, onions, peppers... etc..
make it your very own, that's what i did anyway...

one month




today marks exactly one month since we made our special vows
 before God, the preacher, and everyone that we love.
it was such a beautiful day filled with many happy tears
i was overwhelmed with how lovely our wedding was and i'm 
grateful to my parents and every single person who helped make it so.

im glancing down at the time on the computer and recollecting
what it was i was doing at this exact moment in time on our special day.
the photographers were taking their last few shots of me and my bridesmaids
in a hurry before garrett and his groomsmen came to start getting ready.

see, garrett and i decided that we would wait to see each other that day as i was walking 
down the aisle toward him. everyone tried their best to convince us to
 "have our special moment" before the wedding so that we could go ahead 
and take our pictures beforehand but to us
it takes away the anticipation and the beauty of the moment

so we waited
and we were glad we did because
 the ceremony could not have been any better than it was
it was so intimate and emotional for both of us
we both cried of course
& it was bittersweet
and our together photo's turned out just as good as if 
we would have taken them beforehand.

so word to the next wise bride:
have your special moment when you want
because it is one of those beautiful moments in life
that you will look back on in years to come
and you want it to be everything you ever dreamed it should be.

it is hard to believe that a month has already passed since the wedding
but the day still plays heavily on our hearts as we think back.
i pray we always look back on it often and smile just as we did then.

meet monkey



since the husby is in the shower i decided to do a little posting
 and this is monkey our new little nugget full of joy
he's adopted
and we are proud parents
: )
..yes, he is a cat and yes i named him monkey..
             but the name fits since he has a monkey-like demeanor
            he prefers to lounge around our neck and cuddle a-lot
garrett laughs because i pick the most off the wall names to bestow on every animal i own
..he even had the nerve to tell me i wasn't naming our kids..
that man
and to think i had so many great names already picked out:
brownie..
..oreo
twinkie..
fudge round would be great for a little chunk huh?
...kidding..
really i am kidding don't take any of the above to heart
jeez im not that crazy
but
garrett adores monkey
and so do i
even though garrett gave him my favorite cheetah aka snuggle blanket
it's all dope
while we were watching swamp people i convinced him to make the little guy a house kitty
he surprised me when he said yes like he had already made up his mind before i even asked
softy i tell ya
we will see how it goes..

i hear the husby
it sounds like he is scrambling in the kitchen
he must be eating a whole box of cookies by now

oh lawd i sound like mama


so i have a new best friend and it's called:

i never knew it existed
it is amazing and so helpful
especially for a newlywed wifey such as i
i have bought all of the basic things that i need in the kitchen
but this website has really helped with knowing what to do with everything that i've bought
i can search for foods with a specific ingredient(s) and it will pull up billions of recipes with
that or those specific ingredients in them

it will even re-calculate the measurements for each ingredient 
all i do is type in how many servings i need ,which is (2) of course, and it fits the recipe to my needs
so that im not wasteful
..and save money..
(which makes husby happy)

this recipe is one that i just tried and it is a must eat
i linked the web address to the title below
it's very simple but if your messy like me
your gonna have crackers all over the floor and melted butter in your hair

  • 4 skinless, boneless chicken breast halves
  • 6 ounces egg noodles
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 cup sour cream
  • salt to taste
  • ground black pepper to taste
  • 1 cup crumbled buttery round crackers
  • 1/2 cup butter

directions:

  1. poach chicken in a large pot of simmering water. cook until no longer pink in center, about 12 minutes. remove from pot and set aside. bring chicken cooking water to a boil and cook pasta in it. drain. cut chicken into small pieces, and mix with noodles.
  2. in a separate bowl, mix together mushroom soup, chicken soup, and sour cream. season with salt and pepper. gently stir together cream soup mixture with the chicken mixture. place in a 2 quart baking dish.
  3. melt butter in a small saucepan, and remove from heat. stir in crumbled crackers. top casserole with the buttery crackers.
  4. bake at 350 degrees F (175 degrees C) for about 30 minutes, until heated through and browned on top.

i am a messy cook, always


it's a rainy morning and i just kissed the husby bye
so i guess i'll enjoy this cinnamon cream cheese smothered bagel by myself
..he doesn't like bagels anyway..
i didn't either until just recently
i decided to start eating breakfast for a change but we'll see how long that lasts



last night i cooked garrett a "easy/complicated meal" this time
easy because it was simple but complicated because the butter exploded beyond the pan
garretts eyes looked as if they were going to explode too when he saw my messy goodness
i am a messy cook, always
but this was more like a catastrophe in itself
but it was super yumm-o
and garrett loved it
i know he likes it when he asks me save him some for lunch
when it comes to food i've found he never lies

tomorrow i have a doctors appointment that i've had scheduled forever it seems 
i've been having some health problems since a little before the wedding
that got out of hand
but since then i went to my regular doctor because
i couldn't wait any longer to be seen
and im feeling great now i just have to finish my anti-biotics up
so im hoping to hear some good news tomorrow and that everything has cleared up
garrett has been a good sport though
he really has practiced the "in sickness in health" part of a marriage
and i am so thankful to have such a supportive husband
he has a good heart and he makes me happy even when i feel like shadookie

so we settled for a bowl of cereal


i can bet you can guess whose steak and potatoes is whose?


it's good to have a husby who can work the grill
 husby -because i told him "hubby" makes me think of
a chunky man who wears over-all's and a red bandanna around his scruffy un-kept head
so husby it is
the other night he decided to impress me with his famous steaks
and he did!
he even marinated it over night
it was delicious
oh, those potatoes.. i did that
..score..
i've really enjoyed cooking for him
he told me
"babe, i think you like to cook!"
and i thought about it for minute and to my suprise
"hey, i think i do too!"
he thinks i'm good at it
but i really haven't cooked anything drastic
it's all simple
but he doesn't have to know that!
for all he knows i slave away in the kitchen to feed his sweet face

our first meals together as newlyweds:

1. bbq pork loins
mexican rice

2. buffalo quesdillas
mac and cheese being the back-up plan
(you know me with my made up recipes)

3. chicken roll-ups
string beans

4. chicken shit

5. steak and potatoes

not so bad, huh?

well pretty good compared to this:


so i decided to make him breakfast
while he was in bed
my pancake (meaning one) in turn looked like a burnt chicken breast
and the eggs smelled like a stale fart
the house was a complete smoke bomb

i guess i can't impress him every-time i cook, huh?

so i offered him french vanilla pudding
but it's a good thing he didn't eat it because it was brown
which meant it was out of date
out of date meaning the year 2007
i didn't think much of it at first, it's french
maybe french vanilla is darker than vanilla?
nope
needless to say, tobey sopped it up with a biscuit

so we settled for a bowl of cereal

honeymoon time!


it's true
pictures are worth a thousand words
we'll look back on these moments in years to come
and we'll smile..
and think back to..

when we snuck the plunger into the condo
because you claimed "someone fouled the toliet up" before you
..hmm..
..when i stole the magnetic fork and knife set at jim -n- nicks
leading you to pay with cash because you were scared they would track us down
if you used your debit card..
"walk faster, babe let's get out of here!"
when i broke the wine glass in the dish washer and you called me
mayham!
dragging me out past the waves with me on your back like a cat in water
because i couldn't stand up to even attempt to swim
playing my first time at the slot machines and making an extra ten bucks
making me call the front desk at the hard rock hotel because you
accidently checked us out early on the tv..
eating my birthday breakfast with me
and holding hands on the drive
 home

our buffalo hot wing recipe



our buffalo hot wings
( top secret )


ingredients:
pkg. of wingettes

1 cup flour
2 eggs 
buttermilk ( for breading )

*1/2 tsp. paprika
*1/2 tsp. garlic powder
*1/2 tsp. cayenne pepper
*1/4 tsp. black pepper
1/2 cup hot sauce
1/2 cup butter

& your favorite buffalo wing sauce
we like:
frank's redhot buffalo wing sauce

directions:
mix all *seasonings in with flour. in a saucepan, heat butter and hot sauce.
dip wingettes in egg then in buttermilk. roll wingettes in flour mixture then repeat ( this will make a thicker batter ). fry wingettes in vegetable oil until done. drain chicken then place in hotsauce/butter mixture. place wingettes on large serving plate and pour buffalo sauce on top wingettes.
enjoy!

like them mild?
use 3/4 cup of butter and 1/4 cup of hot sauce
hotter?
use 1/4 cup of butter and 3/4 cup of hot sauce
